Ingredients

  • 1.5 lbs lean ground beef (80/20)

Vegetables

  • 1 large yellow onion
  • 2 cloves garlic
  • 1 red bell pepper

  • 1 cup uncooked long-grain white rice
  • 1 can (10.75 oz) condensed cream of mushroom soup
  • 1 can (10.75 oz) condensed cream of chicken soup
  • 1.75 cups beef broth
  • 1 cup milk
  • 1 tbsp Worcestershire sauce
  • 1 tbsp Dijon mustard
  • 1 tsp dried Italian seasoning
  • 0.5 tsp smoked paprika
  • Salt and freshly ground black pepper to taste

Cheese

  • 2 cups shredded sharp cheddar cheese
  • 1 cup shredded Monterey Jack cheese

Garnish (Optional)

  • Fresh parsley chopped

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C) and lightly grease a 9x13 inch baking dish.
  • In a large skillet or Dutch oven, brown the ground beef over medium-high heat, then drain excess fat and set the beef aside.
  • Sauté the chopped onion and red bell pepper in the same skillet for 5-7 minutes until soft, then add minced garlic and cook for one more minute until fragrant.

Assembly

  • Return the cooked ground beef to the skillet and stir in the uncooked rice, both condensed soups, beef broth, milk, Worcestershire sauce, Dijon mustard, Italian seasoning, smoked paprika, salt, and black pepper, mixing thoroughly.
  • Pour the entire mixture evenly into the prepared 9x13 inch baking dish.

Baking

  • Cover the baking dish tightly with aluminum foil and bake for 45 minutes.
  • Remove the casserole from the oven, take off the foil, and sprinkle both shredded cheeses evenly over the top.
  • Return the uncovered casserole to the oven and bake for an additional 15-20 minutes until the cheese is melted, bubbly, golden, and the rice is tender.

Serving

  • Let the casserole rest for 5-10 minutes before serving, and garnish with fresh parsley if desired.

Notes

For extra flavor, consider adding a pinch of red pepper flakes to the beef and vegetable mixture. If you prefer a milder cheese flavor, you can use a mix of Colby Jack and mozzarella instead of sharp cheddar and Monterey Jack. Make sure the rice is completely tender before removing the casserole from the oven; if not, cover it again and bake for a few more minutes until done.
