  • 3-4 cups Cooked Chicken shredded or diced
  • 4-5 cups Fresh Broccoli Florets cut into bite-sized pieces
  • 1 can Cream of Mushroom Soup 10.5 oz, undiluted
  • 1/2 cup Mayonnaise
  • 1/4 cup Milk
  • 2 cups Cheddar Cheese shredded (divided)
  • 1 teaspoon Onion Powder
  • 1 teaspoon Garlic Powder
  • 1/2 teaspoon Black Pepper
  • Salt To taste

Optional Topping

  • 1 cup crushed Ritz crackers or breadcrumbs
  • 2 tbsp melted butter

Instructions
 

Preparation

  • Preheat oven to 375°F (190°C) and grease a 9x13 inch baking dish.
  • If using fresh broccoli, steam or blanch for 3-5 minutes until crisp-tender, then drain well.

Assembly

  • In a large bowl, whisk together cream of mushroom soup, mayonnaise, milk, onion powder, garlic powder, salt, and pepper until smooth.
  • Add cooked chicken and prepared broccoli florets to the soup mixture and stir until evenly coated.
  • Pour the mixture into the baking dish and spread evenly, then sprinkle 1 ½ cups of shredded cheddar cheese over the top.
  • If using, sprinkle the buttered cracker crumbs or breadcrumbs over the cheese layer.

Baking and Serving

  • Bake for 25-30 minutes, or until hot, bubbly, and the cheese is melted and lightly golden.
  • Let the casserole rest for 5-10 minutes before serving.

Notes

For extra flavor, you can add a pinch of red pepper flakes to the soup mixture. Feel free to use leftover turkey or ham instead of chicken for a delicious variation.
