Dough

  • 1 cup oat flour
  • ½ cup vanilla protein powder
  • ¼ cup maple syrup
  • ¼ cup unsweetened almond milk
  • 2 tablespoons smooth cashew butter
  • 1 teaspoon vanilla extract

Cinnamon Swirl

  • 2 tablespoons melted coconut oil
  • 2 tablespoons unsweetened almond milk
  • 1 tablespoon maple syrup
  • 1 teaspoon ground cinnamon

Preparation

  • Combine oat flour, protein powder, maple syrup, almond milk, cashew butter, and vanilla extract in a medium mixing bowl.
  • Mix thoroughly until a thick, pliable dough forms, adjusting with almond milk or oat flour if needed.
  • Roll the dough between two sheets of parchment paper into an 8x10 inch rectangle, about ¼-inch thick.
  • Whisk together melted coconut oil, almond milk, maple syrup, and ground cinnamon in a small bowl until smooth.
  • Remove the top parchment paper and spread the cinnamon swirl mixture evenly over the rolled dough, leaving a small border on one long edge.
  • Starting from the border-free long edge, tightly roll the dough into a log using the parchment paper to assist.
  • Wrap the log tightly in parchment paper or plastic wrap and refrigerate for at least 30 minutes until firm.
  • Once firm, unwrap and slice the log into 1-inch thick "bites" using a sharp knife.
  • Arrange on a plate and serve to enjoy your healthy, delicious snack!

Notes

For best results, ensure your cashew butter is smooth and stir well before adding to the dough. You can store these protein bites in an airtight container in the refrigerator for up to 5 days.
