Classic Comfort Breakfast Lasagna

  • 12 large eggs
  • 1/2 cup whole milk or half-and-half
  • 1 pound mild or spicy breakfast sausage, cooked and crumbled
  • 8-10 slices day-old challah, brioche, or sourdough bread, cubed or roughly torn
  • 2 cups shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 2 cups fresh spinach, roughly chopped optional
  • 1/2 small yellow onion, finely diced
  • 1/2 red bell pepper, finely diced
  • 2 tablespoons unsalted butter

Seasoning & Garnish

  • Salt to taste
  • Black pepper to taste
  • red pepper flakes optional
  • Fresh parsley for garnish (optional)

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C) and grease a 9x13-inch baking dish.
  • Cook the breakfast sausage in a skillet until browned, then drain the fat and set it aside.
  • In the same skillet, melt butter and sauté diced onion and bell pepper for 5-7 minutes until softened; add spinach if using and cook until wilted.

Assembly

  • Whisk together eggs, milk, salt, pepper, and optional red pepper flakes in a large bowl until well combined.
  • Layer half of the cubed bread at the bottom of the baking dish, followed by half of the cooked sausage, sautéed vegetables, and then 1 cup of cheddar and 1/2 cup of Monterey Jack cheese.
  • Carefully pour half of the egg mixture over the cheese layer, then repeat all layers with the remaining ingredients.
  • Cover the baking dish with aluminum foil and bake for 30 minutes; then remove the foil and bake for another 20-30 minutes until golden brown and set.

Serving

  • Allow the breakfast lasagna to rest for 10-15 minutes before slicing and serving, garnishing with fresh parsley if desired.

Notes

For extra flavor, consider adding a pinch of nutmeg to the egg mixture. You can assemble this lasagna the night before and refrigerate it, then bake it in the morning for an easy breakfast!
