Classic Comfort Chicken Noodle Soup

  • 3-4 lb whole chicken or bone-in, skin-on chicken pieces
  • 1 tbsp olive oil
  • 2 medium carrots
  • 2 celery stalks
  • 1 medium yellow onion
  • 2 garlic cloves
  • 8 cups chicken broth or water
  • 1 tsp dried thyme
  • 1 bay leaf
  • salt to taste
  • freshly ground black pepper to taste
  • 1 cup egg noodles
  • 1/4 cup fresh parsley, chopped

Cooking Steps

  • Place chicken in a large pot, cover with water or broth, and season with salt and pepper. Bring to a boil, then simmer for 40-60 minutes until the chicken is cooked through and easily shredded.
  • Remove cooked chicken to cool, then shred the meat and discard skin and bones. Strain the cooking liquid to create homemade broth, discarding all solids.
  • Heat olive oil in the same pot, sauté diced carrots, celery, and onion for 5-7 minutes until softened. Add minced garlic and cook for another minute until fragrant.
  • Pour the strained chicken broth into the pot with the sautéed vegetables, add dried thyme and bay leaf, then bring the soup to a gentle boil.
  • Reduce heat to medium-low, then add the egg noodles and shredded chicken to the pot.
  • Simmer for 7-10 minutes until noodles are tender, remove the bay leaf, and season generously with salt and pepper to taste.
  • Ladle the hot soup into bowls and garnish with fresh chopped parsley before serving.

Notes

For extra flavor, you can roast the chicken bones before making broth. If you prefer a richer soup, use pre-made chicken broth and add the shredded cooked chicken directly in step 5. Adjust seasoning as needed, and feel free to add other vegetables like peas or corn for variety.
