  • 1 tablespoon olive oil or butter
  • 1 large yellow onion
  • 2 carrots
  • 2 celery stalks
  • 3 cloves garlic
  • 8 cups chicken broth
  • 4 cups shredded cooked chicken
  • 1/2 cup egg noodles
  • 1/4 cup fresh parsley, chopped
  • 1 tablespoon fresh thyme leaves, chopped
  • 1 bay leaf
  • Salt and freshly ground black pepper to taste

Cooking Steps

  • Heat olive oil or butter in a large pot over medium heat. Sauté diced onion, carrots, and celery for 7-10 minutes until softened and fragrant.
  • Stir in minced garlic and cook for 1 minute until aromatic. Pour in chicken broth and add the bay leaf; bring to a gentle simmer.
  • Add the shredded cooked chicken to the pot.
  • Stir in egg noodles, fresh parsley, and fresh thyme. Simmer gently for 10-12 minutes until noodles are al dente.
  • Remove the bay leaf. Season with salt and pepper, then ladle into bowls and serve with optional fresh herbs, crusty bread, or crackers.

Notes

For extra flavor, roast a whole chicken and use its bones to make homemade broth. Adjust seasoning as needed throughout the cooking process. Feel free to add other vegetables like peas or corn.
