Equipment

  • Loaf Pan
  • Large Bowl
  • Small Bowl

Ingredients

Meatloaf

  • 1.5 lbs 80/20 lean ground beef
  • 1/2 cup plain or panko breadcrumbs
  • 1 large egg
  • 1/4 cup milk
  • 1/2 small onion, finely diced
  • 2 cloves garlic, minced
  • 1/2 cup ketchup divided
  • 1 tbsp Worcestershire sauce
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp fresh parsley, chopped Optional: for garnish or extra flavor

Glaze

  • 1 tsp Dijon mustard
  • 1 tbsp brown sugar

Instructions

Preparation

  • Preheat oven to 350°F (175°C) and lightly grease a loaf pan or line a baking sheet with parchment paper.
  • In a large bowl, combine beef, breadcrumbs, egg, milk, onion, garlic, 1/4 cup ketchup, Worcestershire sauce, salt, and pepper; mix gently to avoid overmixing.
  • Transfer the meatloaf mixture to the prepared loaf pan or shape it into an oval on the baking sheet.

Cooking

  • Whisk together the remaining 1/4 cup ketchup, Dijon mustard, and brown sugar in a small bowl to create the glaze.
  • Spread the glaze evenly over the meatloaf. Bake for 55-65 minutes, or until the internal temperature reaches 160°F (71°C).

Serving

  • Remove the meatloaf from the oven and let it rest for 10 minutes before slicing to allow the juices to redistribute.
  • Slice and serve warm.

Notes

For best results, do not overmix the meatloaf mixture. Resting the meatloaf after baking is crucial for a tender and juicy outcome. Serve with mashed potatoes or green beans for a complete meal.
