Classic Cowboy Butter Dipping Sauce

  • 1 cup unsalted butter (2 sticks)
  • 4 cloves garlic, minced
  • 1 small small shallot, finely minced (or 1 tbsp finely minced onion)
  • 2 tablespoons fresh parsley, finely chopped
  • 2 tablespoons fresh chives, finely chopped
  • 1 tablespoon fresh thyme, finely chopped (optional, but recommended)
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cayenne pepper (adjust to your spice preference)
  • 1/4 teaspoon ground mustard
  • 1 tablespoon prepared horseradish (not creamed horseradish)
  • 1 tablespoon Worcestershire sauce
  • 1/2 juice of lemon
  • Salt to taste
  • freshly ground black pepper to taste

  • Melt the butter in a small saucepan over low heat or in a microwave-safe bowl until fully liquid.
  • If using a saucepan, add minced garlic and shallot, simmering for 1-2 minutes until fragrant but not browned. If microwaving, stir garlic and shallot into hot butter and let sit for a minute to infuse.
  • Remove from heat (if using a saucepan) and stir in parsley, chives, thyme (if used), smoked paprika, cayenne pepper, ground mustard, prepared horseradish, and Worcestershire sauce.
  • Squeeze in lemon juice and stir until well combined. Season with salt and freshly ground black pepper to taste, tasting first due to inherent saltiness from Worcestershire and horseradish.
  • Serve immediately while warm, or cool slightly if preferred, to allow the flavors to meld beautifully.

Notes

For an extra kick, add a pinch more cayenne pepper. This sauce is incredibly versatile – try it with grilled vegetables too!
