  • 1 lb ground beef or turkey
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 can (10.75 oz) condensed cream of mushroom soup
  • 1 can (10.75 oz) condensed cheddar cheese soup
  • 1 cup milk
  • 1 cup frozen mixed vegetables
  • 1 cup shredded cheddar cheese
  • 1 tsp dried Italian seasoning
  • Salt and black pepper to taste

Optional Topping

  • 1 cup crushed crackers or breadcrumbs
  • 2 tbsp melted butter

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C) and lightly grease a 9x13 inch baking dish.
  • In a large skillet, brown the ground meat and chopped onion over medium-high heat until cooked and softened, then drain excess grease.

Assembly

  • Stir in the minced garlic for one minute until fragrant, then remove the skillet from heat.
  • Whisk together cream of mushroom soup, cheddar cheese soup, and milk in a large bowl until smooth.
  • Add the browned meat mixture, frozen vegetables, half of the shredded cheddar cheese, Italian seasoning, salt, and pepper to the soup mixture and stir well.
  • Pour the mixture into the prepared baking dish and spread evenly.
  • Optionally, sprinkle the remaining cheddar cheese and the buttered cracker or breadcrumb mixture over the top.

Baking and Serving

  • Bake for 25-30 minutes, or until the casserole is hot, bubbly, and the topping is golden brown.
  • Let the casserole rest for 5-10 minutes before serving to allow the sauce to set slightly.

Notes

For a richer flavor, consider using full-fat versions of the soups and milk. This casserole is also great for meal prepping; simply assemble ahead of time and bake when ready. Leftovers can be stored in the refrigerator for up to 3 days.
