  • 200 g salmon fillets (approx. 7 oz), skin on or off
  • 250 g pasta (approx. 9 oz) (fettuccine, linguine, or farfalle work wonderfully)
  • 1 tbsp olive oil
  • 1 small onion or shallots finely chopped
  • 2 garlic cloves, minced
  • 1/2 cup heavy cream (120ml)
  • 1/4 cup pasta water (60ml), reserved
  • 1/4 cup fresh Parmesan cheese grated, plus extra for serving
  • 2 tbsp fresh dill chopped, plus extra for garnish
  • Salt and freshly ground black pepper to taste

Cooking Steps

  • Cook pasta in a large pot of salted boiling water until al dente, reserving ½ cup of starchy pasta water before draining.
  • Season salmon fillets with salt and pepper, then sear in a large skillet with olive oil for 4-5 minutes per side until cooked through; flake into bite-sized pieces.
  • In the same skillet, sauté chopped onion or shallots for 3-4 minutes, then add minced garlic and cook for 1 minute until fragrant. Pour in heavy cream and bring to a gentle simmer.
  • Stir in Parmesan cheese and reserved pasta water, cooking for 1-2 minutes until the sauce slightly thickens. Add cooked pasta and flaked salmon, tossing gently to coat; stir in fresh dill and season to taste.

Notes

For an extra burst of freshness, a squeeze of lemon juice stirred in at the end brightens the flavors. If you enjoy a little heat, a pinch of red pepper flakes can be added to the sauce along with the garlic.
