  • 1 pound cremini mushrooms
  • 8 ounces cream cheese softened
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup shredded mozzarella cheese
  • 2 cloves garlic minced
  • 2 tablespoons fresh parsley chopped
  • 1 tablespoon fresh chives chopped
  • 1 tablespoon olive oil
  • Salt and freshly ground black pepper to taste

Preparation

  • Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
  • Clean mushrooms, remove stems, and finely chop the stems.

Filling and Baking

  • Combine cream cheese, Parmesan, mozzarella, minced garlic, parsley, chives, chopped mushroom stems, salt, and pepper; mix until creamy.
  • Spoon the cheese filling into each mushroom cap.
  • Arrange stuffed mushrooms on the baking sheet and brush with olive oil.
  • Bake for 20-25 minutes until tender, bubbly, and golden.
  • Cool slightly before serving.

Notes

For extra flavor, you can add a pinch of red pepper flakes to the cheese mixture. These mushrooms are best served warm as an appetizer or a side dish.
