  • 2-4 Chicken breasts Boneless, skinless
  • 8 oz Cremini mushrooms sliced
  • 1 cup Chicken broth Low sodium
  • 1/2 cup Heavy cream
  • 1/4 cup Parmesan cheese Freshly grated (+ more for garnish)
  • 3 cloves Garlic minced
  • 1 Onion small yellow or white, finely diced
  • 1 tbsp Olive oil
  • 1 tbsp Butter
  • 2 tbsp Fresh parsley chopped (for garnish)
  • Salt To taste
  • Black pepper To taste

Cooking Steps

  • Pat the chicken breasts dry and season generously with salt and pepper.
  • Sear the chicken in olive oil over medium-high heat for 5-7 minutes per side until golden brown and cooked through. Remove the chicken and tent it with foil.
  • Add butter to the skillet, then sauté the diced onion for 3-4 minutes until softened. Stir in minced garlic and cook for another minute.
  • Add sliced mushrooms to the skillet and cook, stirring occasionally, for 5-7 minutes until they release their liquid and brown.
  • Pour in the chicken broth, scraping up any browned bits from the pan. Bring to a simmer and reduce slightly for about 3 minutes.
  • Reduce heat to low and stir in the heavy cream, allowing it to warm through gently.
  • Gradually stir in the grated Parmesan cheese until melted and the sauce is smooth. Season with additional salt and pepper.
  • Return the seared chicken to the skillet, spooning the sauce over it. Gently warm for a couple of minutes and garnish with fresh parsley before serving.

Notes

Serve this creamy mushroom chicken with pasta, rice, or mashed potatoes for a complete meal. A side of steamed green beans or asparagus would also complement the dish beautifully.
