  • 1.5 lbs boneless, skinless chicken breasts or thighs
  • 1 can cream of chicken soup 10.5 oz
  • 8 oz cream cheese softened

Seasonings

  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried Italian seasoning
  • Salt and black pepper to taste

For the Sauce

  • 1/4 cup chicken broth optional, for thinning
  • 1/2 cup heavy cream

Garnish & Optional

  • Fresh parsley or chives chopped, for garnish
  • 1 tbsp olive oil for searing, optional

Preparation

  • Season the chicken with salt and pepper, then sear in a skillet with olive oil for 2-3 minutes per side until golden (this step is optional but recommended).

Cooking

  • In the slow cooker, whisk together the cream of chicken soup, softened cream cheese, garlic powder, onion powder, and Italian seasoning, adding chicken broth if needed to thin the mixture.
  • Place the chicken into the slow cooker, ensuring it is well coated with the sauce, then cover and cook on low for 4-6 hours or on high for 2-3 hours until cooked through and easily shredded.
  • Remove the cooked chicken, shred or chop it, and then stir the heavy cream into the sauce in the slow cooker before returning the chicken to combine.

Serving

  • Adjust seasonings to taste, then serve hot, garnished with fresh chopped parsley or chives.

Notes

For extra flavor, you can marinate the chicken for at least 30 minutes before searing. This dish pairs well with rice, mashed potatoes, or pasta.
