Equipment

  • Large skillet
  • Dutch oven
  • Tongs
  • Wire rack

Ingredients

Flavorful Beef

  • 1 lb lean ground beef (80/20)
  • 1 tablespoon olive oil
  • yellow onion finely diced
  • 2 cloves garlic minced
  • 2 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 1 teaspoon smoked paprika
  • ½ teaspoon oregano (Mexican oregano if possible)
  • ¼ teaspoon cayenne pepper (optional, for heat)
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ cup beef broth (or water)

Crispy Tortillas

  • 10-12 corn tortillas (small street taco size works great)
  • Vegetable oil or canola oil for frying (enough to generously coat the bottom of your pan)

Optional Toppings

  • Shredded lettuce, diced tomatoes, shredded cheddar cheese, sour cream, salsa, fresh cilantro, avocado/guacamole, pickled jalapeños

Instructions

Prepare the Flavorful Beef

  • Heat olive oil in a large skillet over medium-high heat, then cook the diced onion for about 5 minutes until softened.
  • Add minced garlic and cook for another minute until fragrant.
  • Brown the ground beef for 8-10 minutes, breaking it up, then drain excess grease.
  • Stir in chili powder, cumin, smoked paprika, oregano, cayenne pepper (if using), salt, and black pepper; cook for 1-2 minutes until fragrant.
  • Pour in beef broth, simmer uncovered for 5-7 minutes, reducing liquid and melding flavors until the beef is moist.

Achieve the Perfect Crisp Tortilla

  • Heat about ½ inch of vegetable oil in a separate large skillet over medium-high heat until hot but not smoking.
  • Warm corn tortillas briefly in the microwave for 15-20 seconds or in a dry skillet to make them pliable.
  • Dip each warm tortilla into the hot oil for 10-15 seconds per side until lightly golden and pliable.
  • Remove from oil and immediately fold the tortilla in half using tongs to create a "U" shape.
  • Continue to fry the folded tortilla on each side for an additional 1-2 minutes until golden brown and crispy, holding its shape with tongs.
  • Place crispy taco shells on a wire rack lined with paper towels to drain excess oil, and optionally sprinkle lightly with salt.

Assemble Your Tacos

  • Spoon a generous amount of the warm, seasoned beef filling into each crispy taco shell.
  • Top with your favorite accompaniments such as shredded lettuce, diced tomatoes, shredded cheese, sour cream, or salsa.

Notes

For extra flavor, try toasting your dried spices in the skillet for 30 seconds before adding the beef broth. Make sure not to overcrowd the skillet while frying the tortillas to ensure even crisping.
