Ingredients
  

For the "Roll-Up" Shells:

  • 6 slices Provolone cheese (or Mozzarella, thinly sliced)
  • 2 tbsp erythritol (or other keto-friendly granulated sweetener)
  • 1 tsp ground cinnamon

For the Cream Cheese Filling:

  • 4 oz cream cheese, softened
  • 2 tbsp erythritol (or other keto-friendly powdered sweetener)
  • 1/2 tsp ground cinnamon
  • 1/4 tsp vanilla extract

Instructions
 

Prepare the Cheese Shells

  • Lay out the cheese slices on a parchment-lined baking sheet, ensuring they are not overlapping.

Bake the Cheese

  • Bake at 375°F (190°C) for 5-7 minutes until bubbly and slightly golden, being careful not to overbake.

Cool and Crisp

  • Remove the cheese from the oven and let it cool for a few minutes; it will firm up and become crispy as it cools.

Make the Cinnamon Sweetener Mix

  • Combine 2 tablespoons of erythritol and 1 teaspoon of ground cinnamon in a small bowl, then set this mixture aside.

Prepare the Cream Cheese Filling

  • In another bowl, beat the softened cream cheese with 2 tablespoons of powdered erythritol, 1/2 teaspoon of ground cinnamon, and vanilla extract until the mixture is smooth.

Assemble the Roll Ups

  • Once the cheese slices are cool and pliable, spread an even layer of the cream cheese filling over each slice, leaving a small border.

Roll Them Up

  • Carefully roll each filled cheese slice tightly into a log shape.

Coat with Cinnamon Sweetener

  • Roll each assembled roll-up in the reserved cinnamon-sweetener mix, ensuring an even and thorough coating.

Serve

  • Serve the roll-ups immediately, or refrigerate them for a firmer texture if desired.

Notes
