  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder

Preparation

  • Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper or foil; if available, place a wire rack inside the baking sheet.
  • Thoroughly pat both sides of the chicken thighs dry using paper towels.
  • In a small bowl, combine salt, pepper, dried thyme, dried rosemary, garlic powder, and onion powder.
  • Drizzle the chicken thighs with olive oil, rub to coat, then generously sprinkle the spice mix over both sides.

Cooking

  • Place the seasoned chicken thighs skin-side up on the prepared baking sheet or wire rack, ensuring they are spaced apart.
  • Bake for 35-45 minutes until the internal temperature reaches 170-175°F (77-79°C) and the skin is deeply golden brown and crispy.

Serving

  • Remove the chicken from the oven and let it rest for 5-10 minutes before serving.

Notes

For extra crispy skin, ensure the chicken is very dry before seasoning. Resting the chicken after baking helps keep it juicy. Serve with your favorite side dishes like roasted vegetables or a simple salad.
