  • 1.5 lbs boneless, skinless chicken thighs
  • 1.5 cups long-grain white rice, rinsed
  • 1 (10.5 oz) can cream of chicken soup
  • 3 cups chicken broth
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons butter
  • 1 cup frozen peas and carrots
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 teaspoon poultry seasoning

Preparation

  • Pat the chicken thighs dry and season liberally with salt, pepper, and poultry seasoning.
  • Melt butter in a large skillet over medium heat, then sauté the chopped onion for about 5 minutes until softened. Stir in the minced garlic and cook for an additional minute until fragrant.

Cooking

  • Optionally, sear the seasoned chicken thighs in the same skillet for 2-3 minutes per side until lightly browned.
  • Transfer the sautéed onions and garlic, along with the seared chicken if used, to your slow cooker.
  • Add the rinsed rice, cream of chicken soup, and chicken broth to the slow cooker, stirring gently to ensure the rice is submerged.
  • Place the chicken thighs on top of the mixture, making sure they are somewhat covered by the liquid.
  • Cover and cook on LOW for 3-4 hours or on HIGH for 2-3 hours, until the chicken is very tender and the rice is fully cooked.
  • Stir in the frozen peas and carrots during the last 30 minutes of cooking.
  • After cooking, stir gently and let the dish rest, covered, for 10-15 minutes before serving.

Notes

For best flavor, don't skip the searing step for the chicken. The browning adds depth of flavor to the dish. You can also add other vegetables like corn or mushrooms during the last 30 minutes of cooking. Adjust seasoning to taste.
