Classic Crockpot BBQ Pulled Beef

  • 3-4 lb boneless beef chuck roast
  • 1 tbsp olive oil
  • 1 large onion chopped
  • 2 cloves garlic minced
  • 1 cup BBQ sauce
  • 1/2 cup beef broth
  • 1/4 cup apple cider vinegar
  • 2 tbsp Worcestershire sauce
  • 1 tbsp brown sugar
  • 1 tsp smoked paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper

  • Heat olive oil in a skillet or Dutch oven over medium-high heat. Sear the beef chuck roast on all sides until browned.
  • Place chopped onion at the bottom of the slow cooker, then add the seared or raw beef on top of the onions.
  • In a medium bowl, whisk together the garlic, BBQ sauce, beef broth, apple cider vinegar, Worcestershire sauce, brown sugar, smoked paprika, salt, and black pepper.
  • Pour the sauce mixture evenly over the beef in the slow cooker.
  • Cook on low for 6-8 hours or on high for 3-4 hours, until the beef is fork-tender.
  • Carefully remove the tender beef and shred it into bite-sized pieces using two forks.
  • Return the shredded beef to the slow cooker with the sauce and stir to coat evenly. Continue to cook on low for 15-30 minutes.
  • Taste the sauce and adjust seasonings as needed, adding more salt, pepper, or apple cider vinegar if desired.

Notes

Searing the beef is optional but highly recommended for a richer flavor. The cooking time may vary based on your slow cooker and the size of the roast.
