Classic Crockpot Chicken

Ingredients
  

Main Ingredients

  • 2-3 lbs boneless, skinless chicken breasts or thighs
  • 1 cup chicken broth or water
  • onion, chopped optional
  • 2-3 cloves garlic, minced optional

Seasoning

  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp paprika
  • ½ tsp dried Italian seasoning

Optional

  • 1 tbsp olive oil for searing

  • Pat the chicken dry with paper towels; optionally sear both sides in olive oil until lightly browned.
  • Combine salt, pepper, paprika, and Italian seasoning in a small bowl, then rub this mixture over the chicken pieces.
  • Place chopped onion and minced garlic, if using, at the bottom of your slow cooker.
  • Arrange the seasoned chicken over the vegetables and pour chicken broth or water over it.
  • Cover and cook on low for 3-4 hours or on high for 2-3 hours until the chicken is fork-tender and reaches 165°F (74°C) internally.
  • Remove and shred the chicken with two forks, or serve whole, then return shredded chicken to the slow cooker to toss with juices before serving.

Notes

For extra flavor, consider marinating the chicken for a few hours before cooking. Adjust seasoning to your preference.
