  • 2 lbs boneless, skinless chicken thighs or breasts
  • 1 tbsp olive oil for searing, optional
  • 1 (10.75 oz) can cream of chicken soup
  • 1 (1 oz) packet onion soup mix
  • 1 cup chicken broth low sodium
  • 2 tbsp cornstarch
  • 2 tbsp cold water
  • Salt and black pepper to taste
  • Fresh parsley or chives for garnish (optional)

  • Pat the chicken dry, season with salt and pepper, then sear in a skillet with olive oil for 2-3 minutes per side until golden. Transfer the seared chicken to your slow cooker.
  • In a medium bowl, whisk together the cream of chicken soup, onion soup mix, and chicken broth until the mixture is smooth.
  • Pour the gravy mixture over the chicken in the slow cooker, cover, and cook on low for 4-6 hours or on high for 2-3 hours until the chicken is cooked.
  • Carefully remove the cooked chicken from the slow cooker and shred it using two forks. In a small bowl, combine cornstarch with an equal amount of cold water to form a smooth slurry.
  • Return the shredded chicken to the slow cooker and stir the cornstarch slurry into the gravy mixture. Cook on high for an additional 15-20 minutes, stirring occasionally, until the gravy reaches your desired thickness. Serve warm, optionally garnished with fresh parsley or chives.

Notes

For an even richer flavor, you can deglaze the skillet with a splash of chicken broth after searing the chicken and add it to the slow cooker. This recipe pairs wonderfully with mashed potatoes or rice to soak up all the delicious gravy. If you prefer a thinner gravy, use slightly less cornstarch slurry or add a bit more chicken broth.
