  • 1.5 - 2 lbs boneless, skinless Chicken Breast or Thighs
  • 2 (15-ounce) cans Cannellini Beans (White Kidney Beans) rinsed and drained
  • 1 (15-ounce) can Great Northern Beans rinsed and drained
  • 1.5 cups Frozen or Canned Corn
  • 1 (4-ounce) can Diced Green Chiles undrained
  • 4 cups low-sodium Chicken Broth
  • 1 medium Onion chopped
  • 3-4 cloves Garlic minced
  • 1 tbsp Cumin
  • 1 tsp Chili Powder white chili style, if available, or regular chili powder
  • 0.5 tsp Dried Oregano
  • Cayenne Pepper Pinch (optional)
  • Salt and Black Pepper to taste

Creaminess

  • 4 oz light Cream Cheese
  • 0.5 cup plain Greek Yogurt

Optional Garnishes

  • Fresh cilantro

Instructions
 

Preparation

  • Place the boneless, skinless chicken at the bottom of your slow cooker.
  • Add rinsed and drained cannellini and Great Northern beans, corn, undrained diced green chiles, chopped onion, and minced garlic to the slow cooker.
  • Pour chicken broth over ingredients, then sprinkle in cumin, chili powder, dried oregano, and optional cayenne pepper, seasoning generously with salt and black pepper.

Cooking

  • Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is thoroughly cooked and easy to shred.
  • Remove cooked chicken from the slow cooker, shred with two forks, and return it to the pot.

Finishing Touches

  • Stir in cubed cream cheese until melted and incorporated, or stir in Greek yogurt just before serving to prevent curdling.
  • Taste and adjust seasonings as needed, adding more salt, pepper, or cumin to your preference.
  • Ladle into bowls and serve with your favorite garnishes.

Notes

For a spicier kick, increase the amount of cayenne pepper or add a fresh jalapeƱo to the crockpot.
