  • 2-3 pounds boneless, skinless chicken thighs or breasts cut into 1-inch pieces
  • 1/2 cup good quality honey
  • 1/2 cup low-sodium soy sauce
  • 6 cloves garlic, minced or 2 tbsp pre-minced garlic
  • 1/4 cup ketchup
  • 1 tbsp apple cider vinegar
  • 1 tbsp sesame oil
  • 1/2 tsp red pepper flakes optional

For Thickening

  • 2 tbsp cornstarch
  • 2 tbsp cold water

Garnish (optional)

  • Sliced green onions
  • sesame seeds

Instructions
 

Preparation

  • Pat the chicken dry with paper towels, and cut into 1-inch pieces if using chicken breasts.
  • In a medium bowl, whisk together the honey, soy sauce, minced garlic, ketchup, apple cider vinegar, sesame oil, and red pepper flakes.

Cooking

  • Place the chicken into your slow cooker and pour the prepared sauce over it, ensuring all pieces are well coated.
  • Cook on LOW for 3-4 hours or on HIGH for 2-3 hours, until the chicken is cooked through and easily shredded or cut.

Finishing Touches

  • Whisk cornstarch and cold water together to create a slurry.
  • Stir the cornstarch slurry into the sauce in the slow cooker and cook on HIGH for another 15-20 minutes until the sauce thickens.
  • Taste and adjust seasoning as needed, then garnish with sliced green onions and sesame seeds before serving.
