  • 2 lbs chicken breasts or thighs boneless, skinless
  • 1 lemon thinly sliced
  • 2 tablespoons olive oil
  • 2 cloves garlic minced
  • 1 tablespoon dried Italian seasoning or a mix of dried oregano, thyme, and rosemary
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup chicken broth optional, for extra moisture
  • fresh parsley chopped (for garnish, optional)

  • Pat the chicken dry with paper towels and place it in the bottom of your slow cooker.
  • In a small bowl, whisk together the olive oil, minced garlic, Italian seasoning, salt, and pepper.
  • Pour the herb mixture over the chicken, ensuring each piece is well coated.
  • Arrange lemon slices over and around the chicken. If using, pour the chicken broth into the slow cooker.
  • Cover and cook on low for 3-4 hours or on high for 2-3 hours, or until the chicken is cooked through and shreds easily.
  • Carefully remove the chicken and serve whole, sliced, or shredded, garnished with fresh parsley if desired.
