  • 1.5 - 2 pounds boneless sirloin steak or chuck roast cut into 1-inch cubes
  • 2 pounds Yukon Gold or red potatoes scrubbed and cut into 1-inch pieces (no need to peel)
  • 1 large onion chopped
  • 2 cloves garlic minced
  • 1.5 cups beef broth
  • 1 condensed cream of mushroom soup (10.75 ounce) can (or cream of chicken for a milder flavor)
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • 0.5 teaspoon black pepper
  • Salt to taste

For serving (optional, but highly recommended for "loaded")

  • 1.5 cups shredded cheddar cheese
  • 6-8 slices cooked bacon crumbled
  • 0.25 cup chopped green onions
  • Sour cream

Instructions
 

Preparation

  • Optionally sear the steak cubes in a hot skillet with oil for 2-3 minutes until browned to enhance flavor.
  • Place potatoes, onion, and garlic into the slow cooker.
  • Place the seared or raw steak cubes over the vegetables in the slow cooker.
  • Whisk together beef broth, condensed soup, thyme, paprika, black pepper, and salt in a separate bowl to make the sauce.
  • Pour the prepared sauce evenly over the steak and vegetables.
  • Cover and cook on LOW for 6-8 hours or on HIGH for 3-4 hours, until steak is tender and potatoes are soft.
  • During the final 30 minutes, sprinkle cheddar cheese over the bake, then re-cover to melt.
  • Serve in bowls, garnished with crumbled bacon, green onions, and sour cream if desired.

Notes

Searing the steak beforehand is optional but highly recommended for a richer flavor profile. For an even creamier result, you can stir in a tablespoon of cream cheese or a splash of heavy cream during the last 30 minutes of cooking. Adjust salt and pepper to your taste, especially after incorporating the savory additions like bacon and cheese.
