Tender chicken thighs or breasts are slow-cooked with vibrant Mediterranean ingredients like Kalamata olives, artichoke hearts, and fresh lemon, creating a dish packed with savory goodness.

  • 1.5 - 2 lbs Boneless, skinless Chicken Thighs or Breasts
  • 1 can Canned Diced Tomatoes 14.5 oz, undrained
  • 1/2 cup Kalamata Olives pitted and halved
  • 1 can or jar Artichoke Hearts 13.75 oz, quartered (drained)
  • 1/2 medium Red Onion sliced or finely chopped
  • 3-4 cloves Garlic minced
  • 1 Lemon zest and juice
  • 1 tsp Dried Oregano or 2 tsp Mediterranean herb blend
  • 1/4 cup Chicken Broth
  • 1 tbsp Olive Oil
  • 1/2 tsp Salt or to taste
  • 1/4 tsp Black Pepper or to taste

For Garnish

  • 2 tbsp Fresh Parsley or Dill chopped

Instructions
 

Prep

  • Pat the chicken dry and season generously with salt and pepper.

Combine & Cook

  • In a slow cooker, combine tomatoes, olives, artichoke hearts, onion, garlic, lemon zest, oregano, and broth; stir well.
  • Nestle the seasoned chicken into the mixture, ensuring it's mostly submerged, then drizzle with olive oil.
  • Cook on LOW for 4-6 hours or HIGH for 2-3 hours until the chicken is tender and shreds easily.

Finish & Serve

  • Optionally, remove and shred the chicken, then return it to the slow cooker and stir in fresh lemon juice.
  • Ladle the chicken and sauce into bowls and garnish with fresh parsley or dill before serving.
