  • 1 lb Ground Beef or ground turkey, chicken, or a plant-based crumble
  • 1 large Onion diced
  • 3 cloves Garlic minced
  • 1 can Diced Tomatoes 14.5 oz, undrained
  • 1 can Black Beans 15 oz, rinsed and drained
  • 1 can Kidney Beans 15 oz, rinsed and drained
  • 1 can Corn 15 oz, drained
  • 1 can Green Chiles 4 oz, diced
  • 1 packet Taco Seasoning Mix 1 oz
  • 1 packet Ranch Seasoning Mix 1 oz
  • 4 cups Chicken or Beef Broth low sodium

  • Shredded cheese
  • Sour cream or Greek yogurt
  • Crushed tortilla chips
  • Avocado
  • Fresh cilantro
  • JalapeƱos
  • Lime juice
  • Cornbread

Instructions
 

Cooking Steps

  • In a skillet, brown the ground meat with diced onion, draining any excess fat, then add minced garlic during the last minute of cooking.
  • Transfer the cooked meat mixture to a slow cooker, then add the diced tomatoes, black beans, kidney beans, corn, and green chiles.
  • Sprinkle in both the taco and ranch seasoning mixes, then pour in the chicken or beef broth.
  • Stir all ingredients thoroughly to combine.
  • Cover and cook on low for 6-8 hours or on high for 3-4 hours until flavors meld and the soup is heated through.
  • Ladle the hot soup into bowls and serve with your preferred toppings.

Notes

For an extra kick, add a pinch of cayenne pepper with the seasonings. This soup freezes well for future meals.
