  • 1.5 lbs boneless, skinless chicken breasts cut into 1-inch cubes
  • 2 tbsp olive oil
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 1 bell pepper (any color), sliced
  • 1 cup broccoli florets
  • 1/2 cup chicken broth
  • 2 tbsp soy sauce or tamari for gluten-free
  • 1 tbsp cornstarch
  • 1 tsp dried Italian seasoning
  • Salt and black pepper to taste
  • Fresh parsley or green onions for garnish (Optional)

Preparation

  • Pat the chicken breast cubes dry with paper towels. Season generously with salt, pepper, and Italian seasoning.
  • Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the seasoned chicken in a single layer and cook for 3-4 minutes per side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.
  • Add the remaining 1 tablespoon of olive oil to the same skillet. Add the diced onion and cook for 3-4 minutes until softened and translucent, then stir in the minced garlic and cook for another minute until fragrant.
  • Toss in the sliced bell pepper and broccoli florets. Sauté for 5-7 minutes, until the vegetables are tender-crisp.
  • In a small bowl, whisk together the chicken broth, soy sauce, and cornstarch until smooth.
  • Pour the sauce mixture into the skillet with the vegetables. Bring to a simmer, stirring constantly, until the sauce thickens.
  • Add the cooked chicken back into the skillet, tossing to coat everything evenly with the sauce. Cook for 1-2 minutes to heat through.
  • Garnish with fresh parsley or green onions, if desired, and serve hot.

Notes

For extra flavor, you can marinate the chicken in a little soy sauce and Italian seasoning for 15-20 minutes before cooking. Adjust the amount of soy sauce to your preference, and feel free to add other vegetables like mushrooms or snap peas.
