  • ½ cup unsalted butter, softened
  • ¾ cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • ¼ teaspoon salt

Preparation

  • Cream softened butter and granulated sugar in a large bowl with an electric mixer until light and fluffy.
  • Beat in the egg and vanilla extract until well combined and fully incorporated.
  • Whisk together flour, baking powder, and salt in a separate medium bowl.
  • Gradually add dry ingredients to wet, mixing on low speed until just combined, then form into a disc by hand.
  • Divide dough into two discs, wrap in plastic, and chill for at least 30 minutes to prevent spreading.
  • Preheat oven to 375°F (190°C) and line baking sheets with parchment paper or silicone mats.
  • On a floured surface, roll out one dough disc to ¼ inch thick, cut shapes with cookie cutters, and place on prepared baking sheets.
  • Bake for 8-10 minutes until edges are lightly golden, ensuring centers remain pale.
  • Cool cookies on baking sheets for 5 minutes, then transfer to a wire rack to cool completely before decorating.

Notes

For best results, do not overmix the dough. Chilling the dough is crucial for maintaining cookie shape. These cookies are perfect for decorating with icing or sprinkles after they have completely cooled.
