  • 2 cloves garlic, minced
  • 1 bell pepper (any color), chopped
  • 1 cup mixed frozen vegetables (e.g., peas, carrots, corn)
  • 1 can (14.5 ounce) diced tomatoes, undrained
  • 1 cup chicken or vegetable broth
  • 1 teaspoon dried Italian seasoning (or a mix of oregano, basil, thyme)
  • Salt and black pepper to taste

Cooking Steps

  • Heat a large skillet over medium-high heat and add the olive oil.
  • Add the ground turkey to the skillet, breaking it up with a spoon until browned; drain excess fat and set aside.
  • Sauté chopped onion and bell pepper in the same skillet for 5-7 minutes until softened, then stir in minced garlic for another minute.
  • Return the cooked turkey to the skillet, then add frozen vegetables, diced tomatoes with their liquid, chicken broth, and Italian seasoning, stirring to combine.
  • Bring the mixture to a simmer, then reduce heat to medium-low, cover, and cook for 10-15 minutes until vegetables are tender and sauce thickens.
  • Season with salt and pepper to taste, and garnish with fresh parsley or shredded cheese if desired before serving.

Notes

You can customize this recipe by adding other vegetables like zucchini or spinach. Serve with rice, pasta, or crusty bread for a complete meal.
