  • 4-5 cups mixed stir-fry vegetables e.g., bell peppers, broccoli florets, snap peas, carrots, mushrooms
  • 2 green onions sliced (for garnish)

Savory Soy-Ginger Sauce

  • ¼ cup low-sodium soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 1 teaspoon cornstarch
  • ½ teaspoon sriracha optional

  • Chop all vegetables into bite-sized pieces; then, whisk together soy sauce, rice vinegar, sesame oil, cornstarch, and sriracha to create your Savory Soy-Ginger Sauce and set aside.
  • Heat oil in a large skillet or wok over medium-high heat, add ground turkey, and cook until browned, draining any excess grease.
  • Push turkey to one side, add chopped onion to the other, sauté for 2-3 minutes until soft, then add minced garlic and grated ginger, cooking for another minute until fragrant.
  • Stir together the cooked turkey, onion, garlic, and ginger, then add mixed stir-fry vegetables; cook for 5-7 minutes, stirring frequently, until vegetables are tender-crisp.
  • Whisk the sauce again, pour it evenly over the turkey and vegetables, and stir to coat all ingredients.
  • Bring the sauce to a gentle simmer and cook for 1-2 minutes, stirring, until it thickens and becomes glossy.
  • Remove from heat, garnish with sliced green onions, and serve immediately over cooked rice or noodles.

Notes

For extra flavor, marinate the turkey in a tablespoon of soy sauce for 15 minutes before cooking. Adjust the sriracha amount to your spice preference. Leftovers can be stored in an airtight container for up to 3 days.
