  • 1 pound large shrimp, peeled and deveined fresh or frozen, thawed
  • 1 cup uncooked white rice such as jasmine or basmati
  • 2 cups water or chicken/vegetable broth for cooking rice
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 2 tablespoons soy sauce low sodium preferred
  • 1 teaspoon sesame oil
  • 1 teaspoon honey or maple syrup optional, for a touch of sweetness
  • 1 tablespoon fresh lime juice
  • 1/4 teaspoon red pepper flakes or to taste, for a little kick
  • 2 green onions, thinly sliced for garnish
  • 1 teaspoon sesame seeds for garnish

Cooking Instructions

  • In a medium saucepan, combine rice and liquid, then bring to a boil. Reduce heat, cover, and simmer for 15-20 minutes until absorbed, then let stand for 5 minutes before fluffing.
  • While the rice cooks, pat the shrimp dry. In a small bowl, whisk together soy sauce, sesame oil, honey (if using), lime juice, and red pepper flakes.
  • Heat olive oil in a large skillet or wok over medium-high heat. Add minced garlic and cook for 30 seconds until fragrant, then add shrimp and cook for 1-2 minutes per side until pink; add quick-cooking vegetables if desired.
  • Pour the prepared sauce over the cooked shrimp, tossing gently to coat and cook for another 30 seconds to 1 minute until slightly thickened. To serve, divide rice among bowls, top with the shrimp mixture, and garnish with green onions and sesame seeds.

Notes

For extra flavor, toast the sesame seeds lightly before garnishing. Feel free to adjust the amount of red pepper flakes for your desired level of spice. This dish is also great with brown rice for a healthier option, though cooking times will vary.
