Cookie Dough

  • 1 cup unsalted butter (2 sticks), softened
  • 1 1/2 cups granulated sugar
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 2 3/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt

Preparation

  • Preheat oven to 375°F (190°C) and line baking sheets with parchment paper or silicone mats.
  • In a large bowl, cream softened butter and granulated sugar with an electric mixer until light and fluffy, scraping down the sides as needed.
  • Beat in the egg until just combined, then stir in the vanilla extract.
  • In a separate bowl, whisk together flour, baking powder, and salt.
  • Gradually add the dry ingredients to the wet, mixing on low speed until just combined, being careful not to overmix.
  • Lightly flour a surface and roll out the dough to 1/4-inch thickness, then cut out shapes using cookie cutters.
  • Transfer cut cookies to prepared baking sheets, leaving about an inch between them.
  • Bake for 7-9 minutes until edges are lightly golden and centers are just set.
  • Cool cookies on baking sheets for 2-3 minutes, then transfer to a wire rack to cool completely.

Notes

For best results, make sure your butter is truly softened to room temperature before creaming. Do not overmix the dough after adding flour to ensure tender cookies.
