Ingredients
  

Bread Layer

  • 6-8 slices day-old sourdough bread crusts removed, cubed

Sausage & Veggie Layer

  • 1 lb bulk breakfast sausage cooked and crumbled
  • 1 cup chopped green bell peppers
  • 1/2 cup chopped yellow onion
  • 1 cup fresh spinach

Cheese

  • 1.5 cups shredded sharp Cheddar cheese

Egg Mixture

  • 8 large eggs
  • 1.5 cups whole milk
  • 1/2 cup heavy cream optional
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon garlic powder

For Greasing

  • 1 tablespoon butter

Instructions
 

Preparation

  • Grease a 9x13 inch baking dish and spread the cubed bread evenly at the bottom.
  • Cook and crumble the bulk breakfast sausage in a large skillet, then drain excess fat.
  • Add onion and bell peppers to the skillet with the sausage, sauté until softened, and stir in spinach until wilted.

Layering the Casserole

  • Sprinkle the sausage and vegetable mixture over the bread cubes, then scatter 1 cup of shredded Cheddar cheese over this layer.

Egg Mixture & Refrigeration

  • Whisk together eggs, milk, optional heavy cream, salt, pepper, and garlic powder until combined.
  • Pour the egg mixture over the layers, ensuring all bread is moistened, and gently press down.
  • Sprinkle with the remaining 1/2 cup of Cheddar cheese, cover, and refrigerate for at least 4 hours or overnight.

Baking

  • Preheat oven to 350°F (175°C) and remove the casserole from the refrigerator 30 minutes before baking.
  • Bake for 45-60 minutes until set, golden brown, and a knife inserted comes out clean.
  • Let the casserole rest for 5-10 minutes before slicing and serving.

Notes

For best results, prepare the casserole the night before so the bread has ample time to soak up the egg mixture, resulting in a more custardy and flavorful dish.
