Ingredients
  

Meatloaf

  • 1.5-2 lbs Ground Meat a mix of ground beef and pork often yields the best flavor and moisture
  • 1 cup breadcrumbs panko or plain
  • 1 large Egg whisked
  • 1/2 cup chopped onion finely
  • 2-3 cloves minced garlic
  • 1/4 cup milk or beef broth
  • 1-2 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried Italian herbs oregano, basil, thyme
  • 1 tbsp Worcestershire sauce optional
  • 1 tsp Dijon mustard optional

For the Glaze

  • 1/2 cup ketchup
  • 2 tbsp brown sugar
  • 1 tbsp apple cider vinegar
  • 1 tsp mustard Dijon or yellow

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and lightly grease a loaf pan or line a baking sheet with parchment paper.
  • Optionally, sauté the chopped onion and minced garlic in a small skillet over medium heat for about 5 minutes until softened; let cool slightly.

Mixing and Baking

  • In a large bowl, gently combine the ground meat, breadcrumbs, whisked egg, milk, cooked aromatics, salt, pepper, Italian herbs, and optional Worcestershire sauce and Dijon mustard, mixing just until combined.
  • Transfer the mixture to the prepared loaf pan or form into a 9x5 inch loaf on a baking sheet.
  • Whisk together ketchup, brown sugar, apple cider vinegar, and mustard in a small bowl to create the glaze.
  • Bake for 30 minutes, then spread half of the glaze over the meatloaf; continue baking for another 25-35 minutes until the internal temperature reaches 160°F (71°C).

Finishing

  • Remove the meatloaf from the oven and let it rest for 10-15 minutes before slicing to allow the juices to redistribute.
  • If desired, spread the remaining glaze over the top just before serving.

Notes

Mixing the meat gently prevents a tough meatloaf. Sautéing the aromatics enhances their flavor and texture. Allowing the meatloaf to rest is crucial for a tender and juicy result.
