  • 1 lb breakfast sausage (pork, turkey, or plant-based)
  • 1 frozen shredded hash browns thawed
  • 2 cups shredded cheddar cheese (or a cheddar-jack blend), divided
  • 12 large eggs
  • 1 ½ cups milk (any kind)
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ¼ teaspoon garlic powder

Instructions
 

Preparation

  • Brown the breakfast sausage in a large skillet, breaking it up until cooked through, then drain excess grease and set aside.
  • Grease a 9x13-inch baking dish and spread the thawed hash browns evenly across the bottom.
  • Layer the cooked sausage over the hash browns, then sprinkle 1 ½ cups of shredded cheese on top.

Baking

  • Whisk eggs, milk, salt, pepper, and garlic powder (and optional vegetables) together until well combined.
  • Pour the egg mixture over the layers in the baking dish; cover and refrigerate overnight if preparing ahead, or sprinkle with remaining cheese if baking immediately.
  • Preheat oven to 375°F (190°C), let refrigerated casserole sit at room temperature for 20-30 minutes, then bake for 45-60 minutes until set and golden brown.
  • Remove from oven and let stand for 5-10 minutes before slicing and serving.

Notes

For a make-ahead option, assemble the casserole the night before and refrigerate. This dish is easily customizable with your favorite vegetables or different types of cheese.
