Meatloaf

  • 1.5 lbs lean ground beef 80/20 is ideal for flavor and moisture
  • 1 small onion finely diced
  • 1/2 cup breadcrumbs panko or plain
  • 1/2 cup milk
  • 1 large egg
  • 2 tbsp ketchup plus more for topping
  • 1 tbsp Worcestershire sauce
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp dried parsley
  • Salt to taste
  • black pepper to taste

Preparation

  • Preheat your oven to 375°F (190°C) and lightly grease a loaf pan or line a baking sheet with parchment paper.
  • In a large mixing bowl, combine all the meatloaf ingredients.
  • Gently mix the ingredients with your hands until just combined, being careful not to overmix.
  • Transfer the mixture into the prepared loaf pan or shape it into an oblong loaf on the baking sheet.
  • Spread an additional 2-3 tablespoons of ketchup over the top of the meatloaf for a caramelized glaze.
  • Bake for 50-60 minutes, or until the internal temperature reaches 160°F (71°C).
  • Remove from the oven and let it rest for 5-10 minutes before slicing to allow the juices to redistribute and ensure a moist result.

Notes

For best results, avoid overmixing the meatloaf mixture to prevent it from becoming dense. Resting the meatloaf after baking is crucial for a moist and flavorful outcome.
