  • 4-6 oz each Salmon fillets skin-on or off
  • 1-2 tablespoons Olive oil
  • 2 cloves Garlic freshly minced
  • 1 cup Cherry tomatoes halved
  • 1 bunch Asparagus trimmed and cut into 1-inch pieces
  • 5 oz Spinach about 5 cups loosely packed, fresh
  • 1 Lemon entire lemon (half for juice, half for wedges)
  • 1 teaspoon Dried dill
  • Salt to taste
  • Freshly ground black pepper to taste

Instructions
 

Preparation

  • Pat salmon fillets dry and season generously with salt, pepper, and dried dill.
  • Heat olive oil in a large oven-safe skillet over medium-high heat.
  • Sear salmon fillets skin-side down for 4-6 minutes until golden and crispy.

Cooking

  • Flip salmon; finish in a preheated 400°F (200°C) oven for 4-8 minutes or on stovetop for 3-5 minutes until cooked through.
  • Remove salmon and tent with foil to keep warm.
  • Add more olive oil to the skillet if needed, then sauté minced garlic for 30 seconds.
  • Add asparagus and sauté for 3-4 minutes until tender-crisp.
  • Stir in cherry tomatoes and sauté for 2-3 minutes, then add spinach and stir until wilted. Season vegetables with salt and pepper.

Serving

  • Return salmon to the skillet with vegetables, squeeze fresh lemon juice over the dish, and serve immediately with extra lemon wedges.

Notes

For best results, use fresh, high-quality salmon. Adjust cooking times based on the thickness of your fillets. Don't overcrowd the pan when searing the salmon to ensure a crispy skin. This recipe is highly adaptable; feel free to add other herbs or vegetables you enjoy. A quick drizzle of balsamic glaze or a sprinkle of feta cheese can elevate the flavors even further.
