Classic Fast Shrimp Rice Bowl

Ingredients
  

Main Ingredients

  • 1 lb large shrimp, peeled and deveined fresh or frozen, thawed
  • 1 cup jasmine or brown rice
  • 2 cups chicken or vegetable broth, or water
  • 1 tbsp olive oil

Sauce

  • 2 tbsp soy sauce low-sodium preferred
  • 1 tsp sesame oil
  • 2 cloves garlic, minced
  • 1 tsp grated ginger fresh is best
  • 1 tsp honey or maple syrup optional
  • 1/2 tsp red pepper flakes or more

Vegetables & Garnish

  • 1 cup mixed stir-fry vegetables broccoli florets, bell peppers, snow peas, shredded carrots
  • 2 green onions, thinly sliced for garnish
  • 1 tsp sesame seeds for garnish

Instructions
 

Cooking

  • In a small saucepan, combine rice and broth or water; bring to a boil. Reduce heat, cover, and simmer for 15-20 minutes until liquid is absorbed and rice is tender.
  • While rice cooks, whisk together soy sauce, sesame oil, minced garlic, grated ginger, honey (if using), and red pepper flakes in a small bowl to create the sauce.
  • Heat olive oil in a large skillet or wok over medium-high heat. Add shrimp and cook for 2-3 minutes per side until pink and opaque; cook in batches if needed.
  • Add mixed stir-fry vegetables to the skillet with the cooked shrimp. Sauté for 3-5 minutes until the vegetables are tender-crisp.
  • Pour the prepared sauce over the shrimp and vegetables, stirring to coat everything evenly. Cook for 1-2 minutes to slightly thicken the sauce.
  • Divide the cooked rice among serving bowls and top with the shrimp and vegetable mixture.
  • Garnish with sliced green onions and sesame seeds before serving, and enjoy immediately.

Notes

Adjust the red pepper flakes to your preferred spice level. For a richer flavor, toast the sesame seeds lightly before garnishing. Feel free to substitute with your favorite quick-cooking vegetables.
