  • 1.5-2 lbs bone-in, skin-on chicken pieces (thighs, drumsticks, or a mix)
  • 1.5-2 cups long-grain white rice (e.g., Basmati, Jasmine)
  • 3-4 cups chicken broth or stock
  • 1 medium medium onion diced
  • 2-3 cloves garlic minced
  • 1-2 tbsp olive oil or vegetable oil

Seasonings

  • Salt to taste
  • Black pepper to taste
  • Paprika to taste
  • Dried herbs (thyme, oregano, or rosemary), to taste

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C) and lightly grease a 9x13 inch baking dish.
  • Pat the chicken dry, then toss with olive oil, salt, pepper, paprika, and desired dried herbs until well coated.

Assembly and Baking

  • Spread uncooked rice evenly in the baking dish, then scatter diced onion and minced garlic over the rice, seasoning with salt and pepper if desired.
  • Pour chicken broth over the rice, then arrange seasoned chicken pieces skin-side up on top, ensuring they are not fully submerged.
  • Cover tightly with aluminum foil and bake for 30 minutes.
  • Remove the foil and bake for an additional 25-35 minutes until the chicken reaches 165°F (74°C), the rice is tender, and the skin is crispy; add more hot broth if the rice appears dry.

Serving

  • Let the dish rest for 5-10 minutes before serving to allow juices to redistribute and rice to set.

Notes

For extra flavor, you can brown the chicken in a skillet for a few minutes before placing it on the rice. Ensure your chicken broth is low-sodium to control the overall saltiness of the dish.
