  • 12-15 round or square rice paper spring roll wrappers
  • 1 cup sliced strawberries
  • 1 large mango peeled and thinly sliced into batons
  • 2 kiwi fruits peeled and thinly sliced
  • 1/2 cup fresh blueberries
  • 1/2 cup fresh raspberries
  • 1 cup thinly sliced pineapple batons
  • 1/2 cup thinly sliced cantaloupe batons
  • 1/2 cup thinly sliced honeydew melon batons

Optional Yogurt Dip

  • 1 cup vanilla or plain Greek yogurt
  • 1 tbsp honey or maple syrup
  • 1 tsp lime juice

Instructions
 

Preparation

  • Wash, peel, and thinly slice all fruits into uniform pieces suitable for rolling, leaving smaller berries whole and cutting larger fruits into strips.
  • Prepare your workspace by having a clean, flat surface and a shallow dish filled with warm water ready for dipping the rice paper wrappers.

Assembly

  • Dip one rice paper wrapper quickly into warm water for 10-15 seconds until pliable, then lay it flat on your clean surface.
  • Arrange a small handful of fruit across the center of the wrapper, about one-third of the way up from the bottom, ensuring not to overfill.
  • Fold the bottom edge of the wrapper up over the fruit, then fold in the left and right sides tightly.
  • Starting from the bottom, tightly roll the wrapper upwards and away from you to create a snug, cylindrical spring roll.

Serving

  • Continue rolling remaining wrappers and fruit, placing finished rolls on a platter with some space between them to prevent sticking.
  • For the optional dip, combine yogurt, honey or maple syrup, and lime juice in a small bowl, stirring until well combined, and serve alongside the spring rolls.

Notes

For the best results, work quickly when dipping the wrappers to avoid over-soaking. You can experiment with any of your favorite fruits in these fun and refreshing rolls!
