Ingredients
  

The Stars of the Show (Chicken & Garlic)

  • 2-3 pounds chicken thighs boneless, skinless (or bone-in, skin-on for more flavor)
  • 6-8 cloves garlic minced

Dairy & Fat (Butter & Broth)

  • 1/2 cup unsalted butter melted
  • 1/2 cup chicken broth

Flavor Enhancers (Herbs & Spices)

  • 1 teaspoon dried parsley
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon dried thyme
  • Salt to taste
  • black pepper to taste

Optional Add-ins (Vegetables & Thickeners)

  • 1 cup baby carrots or potatoes chopped
  • 2 tablespoons cornstarch for thickening sauce

Instructions
 

Prep Your Chicken Thighs

  • Pat the chicken thighs dry with paper towels and season generously with salt and pepper.

Craft the Garlic Butter Sauce

  • In a small bowl, combine the melted butter, minced garlic, chicken broth, dried parsley, dried oregano, and dried thyme, then stir well.

Combine and Cook

  • Place the seasoned chicken thighs into the crockpot and pour the garlic butter sauce evenly over them.

Cook

  • Cover and cook on low for 3-4 hours or on high for 2-3 hours, until the chicken is tender and reaches an internal temperature of 165°F (74°C).

Finishing Touches (Optional Thickening)

  • Optionally, remove the chicken, whisk 2 tablespoons of cornstarch with 2 tablespoons of water to create a slurry, then stir it into the sauce in the crockpot and cook on high for 15-20 minutes until thickened before returning the chicken to the sauce for serving.

Notes

For richer flavor, consider using bone-in, skin-on chicken thighs. Do not overcrowd the crockpot to ensure even cooking. This dish pairs wonderfully with rice, pasta, or mashed potatoes.
