  • 10-12 cups day-old bread, cut into 1/2-inch cubes
  • 1/2 cup unsalted butter
  • 1 large yellow onion, chopped
  • 2 large celery stalks, chopped
  • 2 tablespoons fresh sage, chopped
  • 1 tablespoon fresh thyme, chopped
  • 2-3 cups chicken or vegetable broth
  • 2 large eggs, lightly beaten
  • Salt and freshly ground black pepper to taste

Preparation

  • Preheat your oven to 375°F (190°C) and lightly grease a 9x13 inch baking dish.
  • Spread the bread cubes on a baking sheet and toast for 10-15 minutes until lightly golden and dry; set aside.
  • Melt butter in a large skillet over medium heat, then add onion and celery and cook until softened, about 5-7 minutes.

Assembly and Baking

  • Stir in sage and thyme and cook for 1 minute more until fragrant.
  • In a large bowl, combine the toasted bread cubes, cooked vegetable mixture, and enough broth to moisten; stir in eggs, salt, and pepper.
  • Transfer the mixture to the prepared baking dish and bake for 30-40 minutes, or until golden brown and heated through.

Notes

For extra flavor, consider adding cooked crumbled sausage or mushrooms to the stuffing. You can prepare the dried bread cubes and vegetable mixture a day ahead and store them separately. Assemble and bake just before serving for the best results.
