Main Ingredients

  • 1 pound lean ground beef
  • 1 tablespoon olive oil
  • large onion, chopped
  • 2 cloves garlic, minced
  • 1 inch fresh ginger, grated
  • 4 cups mixed stir-fry vegetables (broccoli florets, sliced bell peppers, snap peas, shredded carrots)

For the sauce

  • 1/4 cup soy sauce
  • 2 tablespoons oyster sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon brown sugar
  • 1 teaspoon sesame oil
  • 1 tablespoon cornstarch

Preparation

  • Chop all vegetables, mince the garlic, grate the ginger, and whisk together all the sauce ingredients in a small bowl until the cornstarch is fully dissolved.

Cooking

  • Heat a large skillet or wok over medium-high heat. Add the ground beef and cook until it is fully browned, then drain any excess fat and set aside.
  • Add olive oil to the same skillet, then add the chopped onion and cook for 2-3 minutes until it starts to soften. Stir in the minced garlic and grated ginger and cook for another minute until fragrant.
  • Add the harder vegetables (like broccoli and carrots) and stir-fry for 3-4 minutes. Then add the softer vegetables (like bell peppers and snap peas) and continue to stir-fry for 2-3 minutes.
  • Return the cooked ground beef to the skillet with the vegetables. Give the prepared sauce a quick whisk, then pour it over the beef and vegetables.
  • Stir constantly for 1-2 minutes until the sauce thickens and coats all the ingredients, then remove from heat immediately.
  • Serve the stir fry over warm rice, quinoa, or noodles.

Notes

For a spicier kick, add a pinch of red pepper flakes with the aromatics. Adjust the sweetness level of the sauce by adding more or less brown sugar to your preference.
