  • 1 lb lean ground beef (450g)
  • 3 cups cooked day-old rice (jasmine or basmati recommended)
  • 1 tbsp olive oil or sesame oil
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 cup frozen mixed vegetables (peas, carrots, corn), thawed
  • 2 large eggs lightly beaten

Sauce Ingredients

  • 3 tbsp soy sauce (low-sodium preferred)
  • 1 tbsp oyster sauce (optional)
  • 1 tsp sugar
  • 1/2 tsp ground black pepper

Garnish

  • Green onions chopped (for garnish)

Cooking Steps

  • Heat a large skillet or wok over medium-high heat, then add the ground beef and cook until fully browned; drain excess fat and set the beef aside.
  • Add olive or sesame oil to the same skillet, then cook the chopped onion for 2-3 minutes until softened. Stir in minced garlic and mixed vegetables, cooking for another 2-3 minutes until tender-crisp.
  • Push vegetables to one side, pour in beaten eggs and scramble until just set. Break eggs into smaller pieces, mix with vegetables, and then add the cooked day-old rice to the skillet.
  • Return the cooked beef to the skillet, pour in soy sauce, oyster sauce (if using), sugar, and black pepper. Stir until well combined and heated through, cooking for an additional 2-3 minutes to crisp the rice. Serve immediately, garnished with chopped green onions.

Notes

For best results, use day-old rice as it tends to be drier and less sticky, making for a better fried rice texture. Adjust soy sauce and pepper to taste.
