  • 12 large eggs
  • 1/2 cup milk dairy or non-dairy
  • 1 cup shredded cheddar cheese
  • Salt to taste
  • Black pepper to taste

  • 1 cup fresh spinach roughly chopped
  • 1/2 cup diced bell peppers any color
  • 1/4 cup diced onion
  • 1/2 cup sliced mushrooms
  • 1/2 cup cooked crumbled sausage

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C) and lightly grease a 9x13 inch baking dish.
  • In a skillet, cook the onion, bell peppers, mushrooms, and sausage over medium heat until softened and cooked through.

Assembly and Baking

  • Whisk eggs, milk, salt, and pepper in a large bowl until well combined.
  • Evenly scatter the cooked vegetables, sausage, and fresh spinach in the prepared baking dish.
  • Pour the egg mixture over the ingredients in the baking dish and sprinkle with shredded cheddar cheese.
  • Bake for 35-45 minutes until the center is set and the top is golden, and a knife inserted comes out clean.

Serving

  • Let the casserole rest for 5-10 minutes before slicing and serving.

Notes

For a vegetarian option, simply omit the sausage. You can also customize the vegetables based on your preference; try adding西兰花 or zucchini. This casserole reheats well and is great for meal prep.
