  • 1 lb Lean Ground Beef (90/10 or 93/7)
  • 2 Zucchini medium, firm and unblemished
  • 1 Onion medium yellow, finely diced
  • 2 Garlic cloves, minced or pressed
  • 1 can Canned Diced Tomatoes (14.5 oz), undrained
  • 1 tablespoon Tomato Paste
  • 1/2 cup Beef Broth low sodium
  • 1 teaspoon Dried Italian Seasoning
  • Salt To taste
  • Black Pepper To taste
  • 1 tablespoon Olive Oil

Garnish & Serving (Optional)

  • Fresh Parsley or Basil For garnish
  • Parmesan Cheese For serving

Cooking Steps

  • Dice the onion, mince the garlic, and chop the zucchini into 1/2-inch pieces.
  • Heat olive oil in a large skillet over medium-high heat, then add ground beef and cook until browned, about 5-7 minutes; drain excess grease.
  • Reduce heat to medium, add diced onion to the skillet and cook for 3-4 minutes until softened, then stir in minced garlic and cook for 1 minute until fragrant.
  • Stir in tomato paste and cook for 1 minute, then add diced tomatoes, beef broth, Italian seasoning, salt, and pepper; bring to a gentle simmer.
  • Add chopped zucchini to the skillet, cover, and simmer for 8-10 minutes until tender-crisp.
  • Uncover, stir, adjust seasoning if needed, and garnish with fresh parsley or basil and Parmesan cheese.

Notes

For a spicier kick, add a pinch of red pepper flakes with the Italian seasoning. This dish can also be served over rice, pasta, or with a side salad.
