  • Chop vegetables into bite-sized pieces; if using potatoes, cut them slightly smaller or give them a 10-15 minute head start in the oven before adding other ingredients.

Combining and Roasting

  • Add the chopped vegetables to the bowl with the chicken.
  • Drizzle olive oil over the chicken and vegetables.
  • Add oregano, thyme, garlic powder, paprika, salt, and black pepper.
  • Toss everything together until chicken and vegetables are evenly coated.
  • Spread the seasoned chicken and vegetables in a single layer on the prepared baking sheet, ensuring space between pieces.
  • Roast for 25-40 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the skin is golden and crispy, and vegetables are tender-crisp.
  • For extra crispy skin, broil for the last 2-3 minutes, watching carefully to prevent burning.

Notes

Bone-in chicken thighs typically take longer to cook than boneless. Adjust roasting time accordingly. If you prefer a stronger garlic flavor, you can use fresh minced garlic instead of garlic powder. For a different flavor profile, try adding other herbs like rosemary or sage.
