  • 4 cups corn kernels fresh or frozen (from 6-8 ears fresh corn)
  • 2 tablespoons unsalted butter
  • 1/4 cup whole milk
  • 1/4 cup heavy cream
  • 1 tablespoon all-purpose flour optional, for thickening
  • 1/2 teaspoon salt or to taste
  • 1/4 teaspoon black pepper or to taste
  • 1 teaspoon sugar optional

  • If using fresh corn, cut kernels from the cob and scrape to extract the "milk"; thaw frozen corn.
  • Melt butter in a large skillet or saucepan over medium heat.
  • Add corn kernels to the skillet, cooking and stirring for 5-7 minutes until slightly tender.
  • For thicker creamed corn, sprinkle flour over corn and butter, stir well, and cook for 1 minute.
  • Pour in milk and heavy cream, then stir everything together.
  • Bring to a gentle simmer, then reduce heat to low and cook for 10-15 minutes, stirring until thickened and corn is tender.
  • Stir in salt, pepper, and optional sugar, then taste and adjust seasonings as needed.

Notes

For an extra layer of flavor, consider adding a pinch of nutmeg or a dash of hot sauce to the creamed corn.
