Ingredients
  

Meatloaf

  • 1.5 lbs ground beef (80/20 lean to fat ratio recommended)
  • 1 cup plain breadcrumbs
  • 1/2 cup milk
  • 2 large eggs lightly beaten
  • 1 yellow onion finely diced
  • 3 garlic cloves minced
  • 1/4 cup fresh parsley chopped
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Tangy Glaze

  • 1/2 cup ketchup
  • 2 tablespoons brown sugar
  • 1 tablespoon Dijon mustard
  • 1 teaspoon apple cider vinegar

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C) and combine milk, beaten eggs, and Worcestershire sauce in a large bowl. Stir in breadcrumbs and let them soften for 5 minutes.
  • Add onion, garlic, parsley, Italian seasoning, salt, and pepper to the breadcrumb mixture and mix thoroughly.
  • Gently mix in the ground beef until just combined; avoid overmixing to prevent a tough meatloaf.

Cooking

  • Shape the meat mixture into a 9x5 inch loaf on a parchment-lined baking sheet.
  • Whisk together ketchup, brown sugar, Dijon mustard, and apple cider vinegar for the glaze.
  • Spread half of the glaze over the meatloaf and bake for 45-50 minutes.
  • Remove the meatloaf, apply the remaining glaze, and bake for another 10-15 minutes until it reaches 160°F (71°C).
  • Rest the meatloaf for 10 minutes before slicing and serving to ensure it remains moist and flavorful.

Notes

For best results, use lean ground beef to reduce excess grease. Feel free to customize the glaze with a pinch of cayenne pepper for a little kick. Serve with mashed potatoes and green beans for a complete meal.
