Classic Instant Sponge Dosa Recipe (2-Minute Dosa Batter) - Healthy Breakfast Ideas

Ingredients
  

Dosa Batter

  • 1 cup semolina (rava/sooji)
  • ½ cup rice flour
  • ¼ cup all-purpose flour (maida)
  • 1 cup sour curd (yogurt)
  • ½ cup water (adjust as needed)
  • ½ teaspoon Eno fruit salt (or baking soda + ¼ tsp citric acid)
  • ½ teaspoon salt
  • Oil or ghee for cooking

Preparation

  • In a large mixing bowl, combine semolina, rice flour, all-purpose flour, sour curd, and ½ cup water.
  • Whisk until smooth; add more water if needed to reach a pourable, pancake-like consistency, then add salt and mix again.

Cooking

  • Just before cooking, sprinkle Eno fruit salt over the batter and gently mix until it fizzes and becomes light and airy.
  • Heat a non-stick griddle over medium-high heat, then lightly grease it with oil or ghee.
  • Pour a ladleful of batter onto the hot griddle, keeping it slightly thick for a spongy texture.
  • Drizzle oil or ghee around the edges and on top, cooking for 1-2 minutes until bubbles form, edges are golden brown, and the top looks cooked.

Serving

  • Gently lift the dosa with a spatula; optionally flip and cook for 30 seconds more.
  • Remove and serve immediately; repeat with the remaining batter.

Notes

For best results, do not overmix the batter once the Eno fruit salt is added. Serve hot with chutney or sambar for a complete meal.
